I created this recipe because I love tofu. It is such a versatile food to cook with and it has a lot of protein! Tofu can be used cooked or uncooked so for this recipe I decided to use it raw from the container for a creamier texture when mixed with the avocado. I love this recipe for breakfast because it allows you to start your day off with healthy fats and protein to keep you full for a long time.

High protein avocado toast with tofu, pistachios and arugala

High-Protein Avocado Toast

Ingredients
  

  • 2 Slices Sourdough bread (Note: Use a whole wheat multigrain bread for extra fiber!)
  • 1/2 Avocado
  • 1/3 Medium firm tofu
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 tbsp Nutritional Yeast
  • Lemon juice from half a lemon
  • 2 handfuls Arugula
  • 10-20 Pistachios
  • Vegan cream cheese optional
  • 1 tsp Balsamic Glaze optional

Instructions
 

  • Toast 2 slices of your choice of bread in a toaster for a crispy texture.
  • Mash half an avocado with approximate 100 grams of medium firm tofu with a fork in a medium sized bowl.
  • Add lemon juice, salt, pepper, nutritional yeast, and other desired spices (Ex: cayenne pepper for some spice!) to the mixture in the bowl.
  • Spread vegan cream cheese on the freshly toasted bread.
  • Add a handful of arugula on top of each slice of bread, then add the avocado/tofu mixture on top.
  • Sprinkle some pistachios and drizzle some balsamic glaze on top of your open faced toast to finish.
