Toast 2 slices of your choice of bread in a toaster for a crispy texture.
Mash half an avocado with approximate 100 grams of medium firm tofu with a fork in a medium sized bowl.
Add lemon juice, salt, pepper, nutritional yeast, and other desired spices (Ex: cayenne pepper for some spice!) to the mixture in the bowl.
Spread vegan cream cheese on the freshly toasted bread.
Add a handful of arugula on top of each slice of bread, then add the avocado/tofu mixture on top.
Sprinkle some pistachios and drizzle some balsamic glaze on top of your open faced toast to finish.
