Crispy Rosemary Fingerling Potatoes
Ingredients
- 1 bag of Fingerling Potatoes I usually buy mine from Trader Joes {TJs}
- 1 1/2 tsp Chili Lime Powder TJs
- 1 tsp Smoked Paprika TJs
- Fresh Herbs I use at least 3-4 sprigs of fresh rosemary, parsley, cilantro and oregano--whatever is available from the garden or at home
- 2-3 cloves of finely chopped fresh Garlic
- Salt to taste
- 1/2 tsp black pepper
- 1 tbsp lime juice
- 2-3 tbsp olive oil
Instructions
- Boil the potatoes with a pinch of salt. I usually microwave them for 10 min.
- Once done, run them through cold water and drain the water. Slice them in half lengthwise
- Add all the other ingredients and make the marinade. Coat the potatoes in the marinade. It's nice to leave them for 15 min. if you have the time
- Spread them on a baking tray flat side on the bottom. Try to not overlay on one another and keep them separated
- Sprinkle some fresh rosemary sprigs on top
- Broil them until they turn crispy on top (turn them occasionally to get an even crispiness). Oven temperatures differ for people so keep an eye. I usually broil for 10 min.
- Squeeze some fresh lime juice on top before serving
- Add your own spices to create a custom taste. They taste best when served fresh and tend to lose their crispness if they sit out for too long!:)
