Fresh HerbsI use at least 3-4 sprigs of fresh rosemary, parsley, cilantro and oregano--whatever is available from the garden or at home
2-3clovesof finely chopped fresh Garlic
Salt to taste
1/2tspblack pepper
1tbsplime juice
2-3tbspolive oil

Boil the potatoes with a pinch of salt. I usually microwave them for 10 min.
Once done, run them through cold water and drain the water. Slice them in half lengthwise
Add all the other ingredients and make the marinade. Coat the potatoes in the marinade. It's nice to leave them for 15 min. if you have the time
Spread them on a baking tray flat side on the bottom. Try to not overlay on one another and keep them separated
Sprinkle some fresh rosemary sprigs on top
Broil them until they turn crispy on top (turn them occasionally to get an even crispiness). Oven temperatures differ for people so keep an eye. I usually broil for 10 min.
Squeeze some fresh lime juice on top before serving
Add your own spices to create a custom taste. They taste best when served fresh and tend to lose their crispness if they sit out for too long!:)
