Creamy Butternut Comfort Soup

We’re in the final weeks of winter squash season, and you’ve likely seen lots of butternut squash on your trips to the market or grocery store. This cozy, creamy soup is the perfect way to put them to use! With just 10 ingredients, this soup is rich and comforting and celebrates the sweeter aspects of butternut without losing a little savory appeal.

Ingredientes
  

  • 1 medium butternut squash halved lengthwise and seeded (approx. 2 cups of cooked squash)
  • 2 tbsp olive oil or sub for water or vegetable broth
  • 1 medium sweet onion chopped
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 2 bay leaves
  • 1 cup vegetable broth
  • 1 medium carrot coarsely chopped
  • 2 celery stalks chopped
  • 1 cup plain soy milk

  • Poke holes in the squash skin and place halves cut-side down to bake or microwave until soft.
  • Bake at 350* for one hour, or microwave on vegetable setting.
  • Allow to cool, scoop out pulp into a food processor, and set aside.
  • While Squash is cooling, heat oil and sauté chopped onion with spices and bay leaves until onion is soft and translucent.
  • Add carrot and celery with vegetable broth, and simmer covered until tender (about 10 minutes).
  • Remove bay leaves and add vegetable mixture to squash in the food processor, pour in soy milk, and purée until soup is thick and creamy.
